The Affineur Hansi Baumgartner
Hansi Baumgartner comes from Varna, a village close to Bressanone in the Isarco Valley. He is an affineur and pioneer in his homeland. An affineur is an expert in the refining and ageing process of cheese, someone who handpicks producers for the best natural products. The former star chef ensures that new culinary experiences await the palate with sometimes unusual ingredients. We decided to visit Hansi Baumgartner, South Tyrol's first affineur in Varna.
