Lebkuchen

Lebkuchen are an essential part of Christmas in South Tyrol and one of the most beloved festive treats. Especially during Advent, they are prepared in many homes according to traditional recipes. In this episode, we show you how to easily make these delicious biscuits at home. Together with Rosa from the Sarntal culinary group “Ollerhond Selbergmochts”, we guide you through the ingredients and the preparation process, so that your biscuits turn out perfectly.

Lebkuchen

Ingredients:

  • 500g rye flour
  • 500g plain wheat flour
  • 400g sugar
  • 270g honey, at room temperature
  • 30g bicarbonate of soda
  • 7 eggs
  • 2 tsp Gingerbread/Lebkuchen spice
  • 1 tsp ground cinnamon
  • ½ tsp ground cloves
  • Grated zest of 1 lemon

Method:

  1. Combine all the ingredients in a large bowl and knead into a smooth dough.
  2. Cover the dough and leave to rest for at least 24 hours.
  3. Roll out the dough to a thickness of about 4mm and cut out desired shapes.
  4. Brush the cut-out Lebkuchen with beaten egg and decorate with almonds, if desired.
  5. Bake in a preheated oven at 200°C for about 7 minutes.
